Serving Size- 6
- 2 1/2 cup broccoli florets
- 1 onion
- 1 cup chopped leeks
- 1 clove garlic, minced
- vegetable oil
- 1/2 tsp. sea salt
- 1,5 liter water
- 1 cup grated cheddar cheese ( optional)
- 1 lemon
Note: you can substitute garlic with 1/2 tsp. ground black pepper)
Chop broccoli and onion into large pieces, mix them with the leeks, add the olive oil, salt and water and put them in a pan on medium heat. When the vegetables soften a bit, remove them with a strainer and blend until they get smooth. Return the mixture in the boiling water, boil for another 3-4 minutes. Remove from heat, add the minced garlic and stir well until it incorporates in the soup. When the soup cools, add the squeezed lemon and serve immediately. If you like you can add the grated cheddar cheese before serving and wait until it melts in the soup.
